Many of the flavors listed below, especially the fruit flavors, can be made one of three ways:
1. As a traditional gelato. Rich and creamy and made with whole milk. The "oily" flavors, such as Cappuccino, Tiramisu and Hazelnut, will include a small amount of heavy cream to add texture and thickness.
2. As a sorbetto. Lots of fruit and water, minus the milk or any dairy product. Perfect for those who are lactose intolerant, or for folks who enjoy their desserts tart and tangy.
3. As a fruit gelato. Still made with fruit and water, but with a gelato base powder that does contain dairy. We call this recipe "meeting in the middle." It's not exactly gelato, not exactly sorbetto, but fruit gelato.
